I have used this flour twice to make pancakes. It is a wonderful product! I too wondered if it is similar to Expandex in the way it is manufactured, even though the use ratio is different. It has an almost vinegary smell like Expandex has.
I used the pancake recipe on the bag, but did find it made a thinner batter than what I expect for pancake. I simply threw in a little Wendy Wark flour blend (maybe 1/4 c.), and it firmed the batter up perfectly. The texture is a little grainy, but not at all unpleasant they way rice flour can be. The pancakes were delicious, and they kept beautifully in a bag on my counter for a few days. They were just as soft and nice as the day I made them. I really want to play around with the flour a little more, but just haven't had the opportunity.
